Perfect Scrambled Eggs

2 Farm Fresh Eggs

1 T Heavy Whipping Cream

2 t clarified butter or vegetable oil

Heat the pan, heat the oil. Whip eggs with cream; pour into heated pan and turn off heat allowing the pans carry over heat to finish the eggs; as you stir. They should be shinny and bright. Sea salt and white pepper to taste.
