Eastern Illinois pork processing plant set to expand

RANTOUL - An eastern Illinois company is planning to expand a pork processing plant that closed in 2009 due to financial issues.

According to Rantoul Foods President James Jendruczek, construction of a 48,000 square-foot expansion to the facility should begin by next spring.

Rantoul Foods acquired the plant from Meadowbrook Farms after its closure in 2009.  In 2011, the facility was reopened with 150 employees.

Rantoul Foods officials say the plant has already been expanded twice since the 2011 reopening.  Officials also say the plant now employs 460 people.
